Most cast-iron problems are fixable. Rust, sticky seasoning and food residue usually come from moisture, excess oil or incorrect heat—not from the pan being permanently ruined.
Problem: surface rust
Cause: moisture reached bare iron.
Fix: remove rust with appropriate scrubbing, wash away residue, dry thoroughly, apply a very thin film of oil and re-season.
Problem: sticky or gummy surface
Cause: too much oil during seasoning or insufficient heat to polymerise it.
Fix: remove sticky residue and season again with a dramatically thinner oil layer.
Problem: food sticks badly
Possible causes: pan not preheated, food moved too early, insufficient fat, weak seasoning or cooking delicate foods before the surface has matured.
Fix: preheat gradually, add oil after warming, allow browning to develop and maintain the seasoning.
Problem: burnt-on food
For bare cast iron, use warm water and a scraper or coarse salt as a gentle abrasive. For enamelled cookware, soak the cooled vessel and use a non-abrasive sponge. Do not attack enamel with steel wool.
Problem: enamel has chipped
Chipping is different from ordinary staining. A damaged cooking surface should be assessed according to the manufacturer's instructions. Avoid continuing to strike or abrade the damaged area.
Problem: enamel is stained
Staining is often cosmetic. Warm soaking and a mild baking-soda paste can help with residue. Avoid aggressive cleaners unless the manufacturer specifically permits them.
Problem: pan warped or cracked
Cast iron is strong but brittle. Severe impact or extreme thermal shock can cause permanent damage. Do not continue using cookware that is structurally cracked.
How to prevent most problems
- Preheat gradually.
- Do not use maximum heat unnecessarily.
- Never shock a very hot pan with cold water.
- Dry bare cast iron immediately.
- Use extremely thin seasoning layers.
- Protect enamel from impact and harsh abrasion.
