Different Kenyan dishes benefit from different cookware. The goal is not to find one universal pot, but to choose pieces that match the cooking technique.

For stews and beans

A deep, lidded pot with stable heat is useful. Cast-iron Dutch ovens are excellent for slow cooking; stainless steel stockpots are practical when lighter weight or larger capacity matters.

For pilau and biryani

Choose a pot with enough base area to brown aromatics and meat before adding rice. A well-fitting lid helps control steam during the final stage.

For chapati and flatbreads

A broad flat pan or griddle provides working space. Cast iron holds heat well, while a quality non-stick or purpose-built flat pan can reduce sticking and simplify cleanup.

For nyama and steaks

A cast-iron skillet or grill pan is particularly useful because its thermal mass helps the surface stay hot when meat is added.

For eggs and pancakes

Non-stick cookware is convenient because these foods are delicate and benefit from easy release.

For vegetables

A frying pan, sauté pan or wok can all work depending on the volume and whether you want quick high-heat cooking or slower braising.

For oven roasting

Use cookware specifically rated for oven use. Cast-iron roasters and Dutch ovens are strong options for chicken, meat and one-pan meals.

Build a mixed cookware kitchen

A practical setup might combine a stainless steel saucepan, non-stick breakfast pan, cast-iron skillet, and enamelled Dutch oven. Each piece earns its place by doing a job well.
