Induction cookware

Does cast iron work on induction?
Yes, cast iron is magnetic and generally works well. Because it is heavy, lift rather than drag it across a glass induction surface.
Does stainless steel work on induction?
Some stainless steel does and some does not. Induction-compatible stainless cookware uses a magnetic base layer.
Does aluminium work on induction?
Plain aluminium is not magnetic. Aluminium cookware needs an induction-compatible magnetic base to work.
Gas cooking
Most cookware materials can be used on gas, but flame should not extend excessively beyond the base. Very high flame wastes heat and can damage handles or exterior finishes.
Electric and ceramic hobs
Flat, stable bases improve contact. Avoid dragging heavy cookware across glass surfaces.
What makes cookware oven-safe?
The body is only one part of the answer. Handles, lid knobs, coatings, glass lids and silicone components may have lower temperature limits. Check the specific product rating before oven use.
