Stainless steel cookware is durable and versatile, but it does not behave like a coated non-stick pan. Technique makes the difference.

Preheat the pan gradually

Start over moderate heat. A properly preheated pan helps food brown and release more cleanly.

Add oil after preheating

Once the pan is warm, add cooking fat and allow it to heat briefly before adding food.

Dry the food surface

Excess water encourages steaming. Pat meat, fish or vegetables dry when browning is the goal.

Do not move food too early

Protein often releases more easily once a crust has formed. Forcing it immediately can cause tearing and sticking.

Use the browned bits

Stainless steel is excellent for pan sauces. Deglaze the browned residue with stock, water or another suitable liquid after cooking.

How to clean stuck-on food

Soak the cooled pan in warm water and use a suitable non-damaging cleaner. For stainless steel without delicate coatings, manufacturer-approved stainless cleaners can help with stubborn discoloration.
